Brinjal Masala
Brinjal Big/Small 6-7/9-10
Onions: 3-4
Oil: 3-4 tbs
Ginger: 20 gms.
Tomatoes: 2
Garam Masala: 1 tbs
Cumin seeds/jeera: 1/2 ts
Dhania/coriander powder: 1/2 tbs
Chana Dal: 1 ts
Urad Dal: 1 ts
Red chilly powder: 1/2 ts
Mustard seeds/rai: 1/2 ts
Dhania seeds: 10-12
Turmeric powder: 1/2 ts
Salt: according to taste
Method:-
- Wash the Brinjals properly and cut them into two parts without cutting the tail. Keep them aside for now
- Chop separately onions, tomato and ginger.
- Heat up the oil in a pan and then add mustard seeds, cumin seeds and dhania seeds to it.Wait for mustard and cumin seeds to start popping and then add Chana Dal and Urad Dal. Add onions and ginger after 1-2 mins.
- Cook it till the onions starts to turn transparent.
- You can now add red chilly powder, turmeric powder, mix before putting chopped tomatoes. Cook it for 5 mins.
- Allow this mix to cool for few minutes (for around 2 mins. Grind it into paste afterwards.
- Now you can add the brinjals to it, cover it and allow the brinjals to get cooked.
- Serve it hot with chapattis, Paratha or rice.
